Menu Plan Monday
I recently purchased The Mom's Guide to Meal Makovers from Meal Makeover Moms.
I have to say that, so far, I think this may be the most effective resource I have found to help change our eating habits. Several years ago, I began a campaign to help us eat more healthy foods. We did make some good changes, but after a while, some things became too difficult to keep up, and we slipped back into bad habits. We still have some good eating habits, but there is definitely room for improvement.
This book is so helpful for me because it uses more healthy convenience foods, doesn't require making everything from scratch, and details all instructions, not assuming I have anything more that basic cooking skills (which is a fairly accurate assumption). It also has lots of suggestions for things kids appealing- very important when trying to convince older kids who already have some bad eating habits to jump on the healthy eating bandwagon.
I read the book last week, shopped on Thursday for some pantry improving ingredients, and already my children have eaten more fresh vegetables and fruits and tried a new recipe for broccoli cheddar soup. Everyone hasn't liked everything, but the fact that all four children have tried everything with some excitement goes a looong way in this house!
I plan to incorporate a few new recipes for lunch and supper each week as well as continue to purchase more healthy foods for snacks- including fresh fruits and vegetable to slowly increase our servings for each day. I had already pretty much eliminated artificial colors and flavors from our diet- except for occasional treats. And we already don't drink soda- except for parties or eating out rarely. But, I am working on changing up crackers or chips (as snacks) for more healthy fruit, yogurt, popcorn, and nuts.
This week's dinner menu:
Monday- Top your own pasta; fruit
Tuesday- Out to eat for Father's Day
Wednesday- Pastini with peas; garlic bread
2 cups all natural chicken broth
1 cup water
6 ounces pastini or small dried pasta
1 1/2 cups frozen peas
1/3 tsp onion powder
3 large eggs beaten
1/3 cup grated parmesan
Combine broth, water, pasta, peas, and onion powder and bring to a boil. Reduce heat and cook at low boil until pasta is tender- about 5 minutes. Do not drain.
Add eggs and parmesan cheese and cook until the eggs are set- about 2-4 minutes.
Thursday-Chicken casserole; corn and peas
Friday- Tator tot casserole with fruit
