Menu Plan Monday

This week is kind of up in the air in regard to menu planning.  The big kids are in drama camp this week, so we're up and out the door early, and they are packing lunch each day.  Dinners will probably be consistent. 

Monday:  Memorial Day cookout at family
Tuesday:  Cheeseburger pie; french fries; green peas
Wednesday:  Homemade Pizza; salad; fruit
Thursday:  BBQ chicken; corn on the cob
Friday:  Pigs in blankets; fruit salad
Saturday:  Eating at the campground with family

What My Child is Reading- May 30, 2010









This is a new blog hop I am participating in because we LOVE to read, and there is always lots of reading going on around here!  Because we haven't officially started back to school, I focused on the current bedtime books we're reading.

This blog hop is hosted at Mouse Grows, Mouse Learns.

I am currently reading 26 Faimount Avenue by Tomie dePaola to Ashlyne and Rachel as our bedtime book.
26 Fairmount Avenue (Newbery Honor Book, 2000)
I love anything by Tomie dePaola, the artist and illustrator who writes the Strega Nona books.  This book is a simple memoir of his childhood centered around his family's building of a house and moving from an apartment.  He shares lots of funny stories about his childhood which the girls are loving!

Kathryne and Charles and I are reading Lord Brocktree as our bedtime book.

Lord Brocktree: A Tale from Redwall

This is a Redwall book by Brian Jacques.  We fell in love with Redwall last year and have now read four or five of the books.  If you haven't yet experienced Redwall think medieval fantasy with animals as the characters.  Redwall books are your typical good versus evil stories with lots of interesting animal characters thrown in.  My kid love the different accents and dialects Jacques gives the characters- especially when I read in "mole speak."

Weekly Wrap Up- Still On Summer Break Edition

I haven't done a weekly wrap up in a few weeks- mostly because we haven't been doing any school.  This was our last official week of this vacation period which has lasted through most of May.

On Monday, we took a trip to our local science museum to enjoy it BEFORE schools get out and it is packed.


On Wednesday, we had a picnic at the river with some other homeschool families.  I forgot my camera, but the excitement was that we saw a snake which we think was a copperhead!  Ugggh!

On  Thursday we joined the YMCA.  Yea!  This is something we had considered for a while.  When we finally decided our Easy Set pool was too dirty to reclaim this year, we thought a Y membership, at least through the summer, would be great!

Today we went bowling with more homeschool friends.  The kids all enjoyed playing, and Charles and Kathryne both bowled at least one strike.

Next week Kathryne and Charles will participate in drama camp, and with that this vacation period will officially end, and we will start our summer school schedule.

Science Museum Field Trip

Our local science museum has been renovating over the last year and a half.  This spring and summer, they are reopening new parts of the museum and some remodeled exhibits.  We are members, and I decided to take the kids to visit today before school gets out, so it wouldn't be so crowded.

We all had a great time. The little children's play place has been totally redone and included a huge water table, blocks, a giant lite brite, and a toddler play area.  One of the special exhibits was about bacteria and microbitia that live on your body.  I thought it was cool.  The kids were a little grossed out.  A new 3D theater featured shows about sea turtles and dinosaurs.  The kids' favorite was a new exhibit called Think it Up where they could play with all kinds of inventive materials and activities.

Home School Blog Hop- Favorite Subject



Theme: Your favourite subject to teach (or learn alongside) your children and why?

(This is only my second time participating in a blog hop, so I hope I am doing this right!)

This year I have had two subjects that I particularly enjoy learning alongside my children.  Latin has become one of my favorites.  We began learning Latin this year using Latin  for Children from Classical Academic Press, and I have really enjoyed Latin- probably because of the emphasis on grammar in this curriculum and the fact that I LOVE grammar.  (I know I'm crazy!)

The other subject I am always eager to study with the children is history.  I've always enjoyed history, and we use Story of the World as our history curriculum.  It really makes history come alive and helps us to learn what happened and when and fit it into the big scheme of things.

Another Week of Vacation

I just realized that I haven't blogged all week!

We are still taking it easy, no school for now.  We did go to a great park about 45 minutes away this week.  We went with some homeschool friends of ours.  The kids had a good time playing and picnicking, and I had a great time socializing.

We're also able to swim now- not in our above ground which is unfortunately covered in algae still.  But, we have gotten to go twice to my sister's neighborhood pool.  I love these lazy summer days of swimming, picnicking and staying outside until dark!

This week, I am planning to take the kids to visit Discovery Place- a large local science museum- before local schools are out and things are crowded.  We are also planning an end of the school year picnic at the river with some homeschooling friends, and probably more swimming at my sister's pool.

Next week it is back to a regular routine- drama camp for the big kids and then back to school work for us all.

Vacation Week Number On

This week was a vacation week- no school.  We took full advantage of our vacation.

On Tuesday, we went to Plaza Fiesta- a local indoor play place.  I typically avoid indoor play places because of the germs, but flu season is mostly over here, and this place has a reputation for being very clean.  I was impressed by the cleanliness and safety measures, and, because local schools were still in, there were few other people there.  The kids had a great time and played for about three hours on the play equipment.

On Wednesday, we took a much needed library trip.  I had books to return, and all of the kids needed books.  We also went out to lunch at McCallisters.

On Thursday, we didn't have our baby because she had been sick and running a fever, so we went to Ray's Splash Planet- the indoor water park- for one of the last homeschool Thursdays of the season.  On Thursdays during the school year, homeschoolers can play in the water park for a greatly reduced rate.  Ray's was very uncrowded.  We played and had a good time!

On Friday, we (I) decided to stay home for the day.  We had potential plans to bowl with friends, but they were sick.  I enjoyed having a day at home after a busy week.

This week, we don't have quite so many things planned.  I think we will do a park day with the homeschool group if the weather is agreeable, and we are going to try to get together with the friends from last week.

Menu Plan Monday




In all my free time with no school, I am taking some time to do all those things I get behind on while we are doing school.  Like updating and remaking some menu plans and grocery lists.  I am going to attempt to have at least five and possibly ten complete menus and grocery lists that I can simply print out and use each week.  It sounds like a good idea in theory anyway!

So, this week's menu is:


Monday:

Breakfast- Biscuits, scrambled eggs, and bacon

Lunch- Chicken nuggets

Supper-
Cheeseburger Pie
    1 lb ground beef
    1 cup cheddar cheese
    minced onion
    1/2 cup bisquick
    1 cup milk
    1 egg
    Salt and pepper to taste
Grease pie plate.  Heat oven to 425.  Brown ground beef with onion.  Layer browned meat on bottom of greased pie plate and top with cheese.  Salt and pepper to taste.  Mix bisquick, milk and egg in a bowl.  Pour over ground beef and cheese.  Bake for 25 minutes or until done through.

Tuesday:

Breakfast- Easy Muffins
    Ingredients
  • 2 cups all-purpose flour
  • 1 cup white sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 (8 ounce) container blueberry flavored yogurt
  • 1 egg
  • 1 teaspoon vanilla extract
  • 4 tablespoons butter, melted
  • 2 cups blueberries

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with paper muffin liners.
  2. Stir together flour, sugar, baking soda and baking powder. In a separate bowl, combine yogurt, egg, vanilla, butter and blueberries. Stir mixtures together just until combined; batter will be very thick. Scoop into prepared muffin cups.
  3. Bake in preheated oven for 25 minutes.

Lunch- Cheese Quessadillas

Supper- Baked Spaghetti
Ingredients
  • 1 (16 ounce) package spaghetti
  • 2 pounds ground beef
  • 1/4 cup chopped onion
  • 2 (26.5 ounce) cans meatless spaghetti sauce
  • 1 (16 ounce) container fat-free sour cream
  • 2 cups shredded mozzarella cheese, divided
  • 1/2 cup Parmesan cheese
  • salt and black pepper to taste

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a deep 9x13 inch baking dish.
  2. Bring a large pot of salted water to a boil over high heat. Stir in the spaghetti. Boil the pasta until cooked through but still firm to the bite, 8 to 10 minutes. Drain well.
  3. Brown ground beef and onion in a large skillet over high heat; drain fat. Stir in the spaghetti sauce, sour cream, and 1 cup of the mozzarella. Mix in the cooked pasta. Transfer pasta mixture to prepared baking dish. Top with remaining 1 cup of mozzarella and the Parmesan cheese. Cover pan with aluminum foil.
  4. Bake in preheated oven until hot and bubbly, about 30 minutes.

Wednesday:

Breakfast- Cereal or packaged oatmeal

Lunch- Easy calzones (Crescent roll dough wrapped around mozerella cheese and baked at 350 for 15 minutes.  Serve with pizza sauce.)

Supper- Easy Grilled Teryaki Chicken

Ingredients

  • 4 skinless, boneless chicken breast halves
  • 1 cup teriyaki sauce
  • 1/4 cup lemon juice
  • 2 teaspoons minced fresh garlic
  • 2 teaspoons sesame oil

Directions

  1. Place chicken, teriyaki sauce, lemon juice, garlic, and sesame oil in a large resealable plastic bag. Seal bag, and shake to coat. Place in refrigerator for 24 hours, turning every so often.
  2. Preheat grill for high heat.
  3. Lightly oil the grill grate. Remove chicken from bag, discarding any remaining marinade. Grill for 6 to 8 minutes each side, or until juices run clear when chicken is pierced with a fork.
Brown/wild rice

Thursday:

Breakfast:  Cinnamon toast sticks with syrup (Make cinnamon toast with sugar and cinnamon.  Cut into strips and serve with warm syrup.)

Lunch:  Dipper lunch- Cut up fruit, pepperonis, crackers, peanut butter, yogurt

Supper:  Angel hair with Feta and Sundried Tomatoes (I plan on adding bacon.)

Ingredients

  • 1 (16 ounce) package angel hair pasta
  • 1/4 cup olive oil
  • 4 cloves garlic, crushed
  • 3 ounces sun-dried tomatoes, softened and chopped
  • 1 (8 ounce) package tomato basil feta cheese, crumbled
  • 1 cup grated Parmesan cheese
  • 1 bunch fresh cilantro, chopped
  • salt and pepper to taste

Directions

  1. Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water until done; drain. Return pasta to the pot.
  2. Mix in olive oil, garlic, tomatoes, feta, and Parmesan cheese. Stir in cilantro and season with salt and pepper. Serve warm.

Fruit Salad

Ingredients

  • 1 pint fresh strawberries, sliced
  • 1 pound seedless green grapes, halved
  • 3 bananas, peeled and sliced
  • 1 (8 ounce) container strawberry yogurt

Directions

  1. In a large bowl, toss together strawberries, grapes, bananas, and strawberry yogurt. Serve immediately.



Friday:

Breakfast- Breakfast Cookies
Ingredients
  • 2 cups white sugar
  • 1 cup peanut butter
  • 1 cup butter or margarine
  • 1/2 cup water
  • 2 tablespoons vanilla extract
  • 2 eggs
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups rolled oats
  • 1 1/2 cups raisins
  • 6 cups toasted oat cereal rings

Directions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. In a very large bowl, mix together the sugar, peanut butter, butter, water, vanilla and eggs until smooth. Combine the flour, baking soda and salt; stir into the batter. Mix in the oats and raisins, then carefully stir in the cereal. Drop 1/2 cupfuls of dough onto ungreased cookie sheets, spacing cookies about 4 inches apart. Flatten cookies to 1 inch thick.
  3. Bake for 12 minutes in the preheated oven, until cookies are lightly browned at the edges. Let stand on the cookie sheets for 5 minutes before removing to wire racks to cool completely. Store at room temperature. I like to put each cookie into a sandwich bag which makes them easy to grab on the way out the door.


Lunch- Sandwiches

Supper- Pizza- Make a homemade crust or use one from the refrigerator section, top with sauce and all your favorite toppings, and bake.
Salad

  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • 1/8 teaspoon black pepper
  • 2 eggs, lightly beaten
  • 2/3 cup milk

Directions

  1. Preheat oven to 400 degrees F (200 degrees C). Lightly grease a rimmed pizza pan or baking sheet.
  2. In a large bowl, stir together flour, salt, oregano and black pepper. Mix in eggs and milk; stir well. Pour batter into prepared pan and tilt until evenly coated. Arrange toppings of choice on top of batter.
  3. Bake in preheated oven for 20 to 25 minutes, until crust is set.
  4. Remove crust from oven. Drizzle on pizza sauce and sprinkle on cheese. Bake until cheese is melted, about 10 minutes.



Saturday
:

Breakfast: Cereal and Packaged Oatmeal

Lunch: Sandwiches or leftovers

Supper: Slider Burgers

Ingredients

  • 2 pounds ground beef
  • 1 (1.25 ounce) envelope onion soup mix
  • 1/2 cup mayonnaise
  • 2 cups shredded Cheddar cheese
  • 24 dinner rolls, split
  • 1/2 cup sliced pickles (optional)

Directions

  1. Preheat an oven to 350 degrees F (175 degrees C). Cover a baking sheet with aluminum foil and spray with cooking spray.
  2. Mix together the ground beef and onion soup mix in a large skillet; cook and stir over medium-high heat until the beef is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Remove from heat. Stir the mayonnaise and Cheddar cheese into the ground beef mixture.
  3. Lay the bottoms of the dinner rolls on the prepared baking sheet. Spread the cheese and beef mixture on the bottom half of each roll. Replace the tops. Cover with another sheet of aluminum foil sprayed with cooking spray.
  4. Bake in the preheated oven until the burgers are heated through and cheese melts, about 30 minutes. Serve with sliced pickles.

Sunday Brunch recipe
:

Breakfast Casserole

Ingredients:

  • 1/2 pound spicy or mild pork sausage
  • 1 medium onion, chopped
  • 4 cups frozen diced hash brown potatoes, thawed (about 16 ounces)
  • 1 1/2 cups shredded Monterey Jack or Cheddar cheese
  • 3 eggs, beaten
  • 1 cup milk
  • 1/4 teaspoon pepper
  • mild salsa, optional

Preparation:

In a large skillet, cook sausage and onion, breaking up sausage with a spatula. When sausage is cooked through, drain off excess fat. In an 8x8x2-inch square baking dish, layer the hash brown potatoes, half of the shredded cheese, browned sausage and onion mixture, and remaining shredded cheese.
In a bowl, combine eggs, milk and pepper; pour egg mixture over cheese.
Bake, covered, in a 350° oven for 45 to 55 minutes or until a knife inserted near center comes out clean. Transfer casserole to a wire rack and let stand for 10 to 15 minutes.
Cut into squares. Serve with salsa, if desired.

Mother's Day Camping

Every year, Jason and I take the kids somewhere for Mother's Day to spend the day just the six of us.  And every year, we usually camp on Memorial Day weekend.  But, this year, we're not going to be able to camp around Memorial Day because of Kidshine and Flag Football camp.  So, we combined the two and camped for Mother's Day.

Amazingly, it did NOT rain on this camping trip.  Which was a wonderful thing for me.  So, we did not pack up and come home in the middle of the night.  Which was a wonderful thing for Jason.  We really had wonderful weather.  There was a slight bug invasion last night culminating in thousands of dead gnat carcasses.  But, other than that, it was a good trip.  We finally have this sleeping thing worked out.  Jason and I slept in the camper.  Kathryne had her own tent.  And Charles and the little girls slept in the big tent.  We had plenty of room for everyone!  And we only got up an average of four times per night to walk to the bathrooms.

I pointed out to Jason when we were home this afternoon that it took about two hours to load up Friday, about two hours to set up at the campground, about two hours to take down this morning, and about two hours to unload and clean up today.  Not to mention the five loads of laundry looking at me for tomorrow.  All of this for two nights and one good day at the campground.  Hmmm, is it any wonder that camping may not be my favorite vacation?

Actually, we had a very good time.  The kids love camping, and it is at least tolerable for me now.  We rented a boat this time.  That was lots of fun.  And Jason's family came down for a cookout last night, so we had lots of fun with that.  I was happy to get home and gt clean today, but I think I will live to camp again.

Cleaning Up, Cleaning Out, and Moving On

We have officially finished our required 180 school days!  Woohoo!  This may not seem like a big deal because we do school year round, but when I can see 4-5 lovely weeks stretching out ahead of me with no school, I am as excited as the kids!

No school gives extra time for house cleaning and all those projects that get left behind while we are doing school.  I have cleaned off and organized all the bookshelves.  I have cleaned out what clothes I still needed to go through for the kids.  I filed and organized all our school things from the past year.  I updated all the school records for the year and filed those.  I cleaned out the kids school boxes.  I helped Charles clean out his room.  (The girls had been done recently.)  I cleaned out Abby's (the baby I keep) clothes and packed away what she had outgrown.  I even cleaned out the van!  I also set up Hoomeschool Tracker for the new school year and printed off the things we need for our summer unit.  Whew!  I feel industrious!

I plan on taking the next few weeks off.  Kathryne and Charles have drama camp the first week of June (which I will count as school), and Charles has flag football camp the second week of June (which will probably be a vacation week).

I hope we can take a few field trips the next couple of weeks while the weather is really nice and before regular school gets out.

This week, we also finished up dance and AWANA with a recital and awards program.  So, programming is officially over for the summer also!
